Whole Wheat Bread

Okay--I meant to get this up last night but my hubby had to go out to a farm and so I was home with my toddler and just never got around to it. Here is the basic recipe except that I added whole wheat gluten and dough enhancer....and I can't remember how much....I have it written down at home but I am now at work, I just basically followed what the package directions said, I think it was 1/3 of one and 3 tablespoons of the other...but alas, I do not recall which was which! (I know, scream at me in frustration, I am beating my head against the wall as I type!)

Its good even without that extra stuff....here it is!

Whole Wheat Bread

5 c. warm water
2 T. salt
½ c. oil
½ c. honey
3 T. yeast
14 c. freshly ground white wheat flour (approx.) ( I am going to admit that I did not freshly ground mine, in fact it came out of a bag from the grocery store....shame, shame, I know!)
4 tablespoons of dough enhancer (optional)
1/3 cup of whole wheat gluten (optional)


Mix all ingredients in large mixer. Mix for 5-7 minutes. Let stand for 5 minutes. Shape into loaves. (Makes 4 regular sized loaves.) Let rise. Bat at 350 degrees for 25-30 minutes.

Recipe: Honey Oatmeal Wheat Bread


This has turned into one of my favorite breads to make. Its easy and not too heavy and not too light, plus the oatmeal adds some extra nutritional value! I use my kitchenaid mixer, but you could do this by hand.

Ingredients:

1 1/2 cups of water
1/2 cup of honey
1/3 cup of butter
3 1/2-4 1/2 cups of white wheat flour
2 cups of all purpose flour
1 cup of oatmeal
2 teaspoons of salt
2 packages of active dry yeast (equals 4.5 tablespoons)
2 eggs
1 Tablespoon of Whole Wheat Gluten (optional)
1 Tablespoon of Dough Enhancer (optional)

Topping:

1 egg white
1 tablespoon water
oatmeal
...
Place water, honey, and butter in small saucepan. Heat over medium low heat until mixture is very warm (120F-130F).

First place oats, then all the white flour, 3 cups of wheat flour, dough enhancer, whole wheat gluten, salt, and yeast in mixing bowl. Using a dough hook, turn to speed 2 and mix for 15 seconds. Continuing on Speed 2, gradually add warm mixture to flour mixture and mix about 1 minute. Add eggs and mix about 1 minute longer.

Continuing on Speed 2, add remaining flour, 1/2 cup at a time, and mix about 2 minutes, or until dough starts to clean sides of the bowl. Knead on Speed 2 about 2 minutes longer.
Place dough in greased bowl, turning to grease top. Cover. Let rise in warm place, free from draft, about 1 hour or until double in size.

Punch dough down and divide in half. Shape each half into a loaf. Place in greased 8.5X4.5X2.5 inch baking pans. Cover. Let rise in warm place, free from draft, about 1 hour, or until double in size.

Beat egg white and water together with a fork. Brush tops of loaves with mixture. Sprinkle with oatmeal. Bake at 375 degrees F for 30-40 minutes. Remove from pans immediately and cool on wire racks.

Yields 32 servings, about 16 slices per loaf.

Whole Wheat

Honey Whole Wheat Sandwich Bread

I am trying to use more whole wheat in my cooking and am on a search for a really good whole wheat bread. I have made two very good recipes so far but am still looking for perfection. Any good recipes, please send my way! Here is one that is a Whole Wheat Honey Sandwich Bread that was nice and light. Since you let it rise 3 times, it is very light compared to many other whole wheat recipes I have tried. I made some yummy chocolate chip cookies last night with my friend Mel's recipe. They are so good! I knew it was an A+ recipe so I played with the flour a little and did half whole wheat pastry flour and half regular flour and they still turned out great! Thanks Mel! Mel also makes the best peanut butter bars in the world...among other things. There is nothing more beautiful than a good chocolate chip cookie recipe!

I need to pull out my sewing mahine sometime soon. My son needs a new nap mat cover for the new school year. Last year was frog themed, this year I might do a zoo theme or cowboy/wester theme. I need to get to a bigger town with a bigger fabric selection and find something sute! I will post it when I am done!
